Ingredients
  

For the Chicken and Potatoes:
  • 4 skinless bone in chicken thighs
  • 1 to 1.5 pounds small new potatoes halved
  • 1 tablespoon olive oil
  • Salt and freshly ground pepper to taste
For the Maple Mustard Sauce:
  • cup brown mustard
  • 1 tablespoon yellow mustard
  • ¼ cup maple syrup
  • Chopped fresh parsley for garnish

Method
 

  1. Season chicken and potatoes with oil, salt, and pepper.
  2. Mix mustard and maple syrup until smooth.
  3. Arrange chicken and potatoes in a baking dish.
  4. Spoon sauce over everything.
  5. Bake until golden and cooked through.
  6. Garnish with parsley and serve warm.
