Ingredients
  

For the Crispy Tofu:
  • 14 oz firm tofu pressed and cubed
  • 3 tbsp cornstarch
  • 2 tbsp soy sauce or tamari
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • ½ tsp smoked paprika
  • Salt and black pepper to taste
For the Dairy-Free Creamy Sauce:
  • 2 tbsp olive oil
  • 4 garlic cloves minced
  • 1 small shallot diced
  • 1 cup canned coconut milk full-fat
  • 1 cup tomato puree
  • 2 tbsp tomato paste
  • ½ cup vegetable broth
  • 1 tbsp nutritional yeast
  • 1 tsp dried oregano
  • ½ tsp chili flakes optional
  • Salt and pepper to taste
For the Gnocchi:
  • 1 lb store-bought gnocchi vegan option
Optional Toppings:
  • Fresh parsley or basil
  • Toasted pine nuts
  • Vegan parmesan shreds

Method
 

  1. Bake tofu until golden and crispy.
  2. Cook gnocchi until tender.
  3. Simmer dairy-free tomato cream sauce.
  4. Combine tofu and gnocchi with the sauce.
  5. Garnish and serve warm.
