Ingredients
  

For the Greek Chicken:
  • lbs boneless skinless chicken thighs
  • 4 cloves garlic minced
  • Zest of 1 lemon
  • cup fresh lemon juice
  • ½ teaspoon freshly ground black pepper
  • 2 tablespoons dried Italian seasoning
  • 1 teaspoon kosher salt
  • ¼ cup olive oil
  • ½ cup plain Greek yogurt
Optional Garnish:
  • Fresh parsley
  • Extra lemon wedges

Method
 

  1. Mix yogurt, lemon, garlic, oil, and seasonings.
  2. Coat chicken and let it rest briefly.
  3. Bake until cooked through and lightly golden.
  4. Rest and finish with fresh herbs and lemon.
