Ingredients
  

For the Chicken & Vegetables:
  • 1 ½ lbs boneless skinless chicken breasts sliced into thin strips
  • 3 bell peppers red, yellow, green, sliced
  • 1 large red onion sliced
  • 3 tbsp olive oil
  • 1 ½ tsp chili powder
  • 1 tsp smoked paprika
  • 1 tsp cumin
  • 1 tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp oregano
  • Salt and black pepper to taste
For Serving:
  • 8 small flour or corn tortillas
  • 2 tbsp fresh lime juice
  • Fresh cilantro chopped
  • Sour cream guacamole, or salsa (optional)

Method
 

  1. Slice chicken and veggies, arrange on sheet pan.
  2. Toss with oil and fajita seasoning until coated.
  3. Roast at 425°F for 18–20 minutes, flipping halfway.
  4. Finish with lime and cilantro.
  5. Serve in warm tortillas with toppings.
