Ingredients
  

For the Chili:
  • 2 pounds ground beef
  • 1 large onion chopped
  • 3 cloves garlic minced
  • 1 red bell pepper chopped
  • 1 can 15 oz kidney beans, drained and rinsed
  • 1 can 15 oz black beans, drained and rinsed
  • 1 can 28 oz diced tomatoes
  • 1 can 6 oz tomato paste
  • 1 cup beef broth
  • 1 cup beer dark ale or lager
  • 2 tablespoons chili powder
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • ½ teaspoon cayenne pepper optional for heat
  • Salt and black pepper to taste
Optional Toppings:
  • Shredded cheddar cheese
  • Sour cream
  • Sliced jalapeños
  • Green onions
  • Fresh cilantro
  • Crushed tortilla chips

Method
 

  1. Brown the beef and sauté onion, garlic, and bell pepper.
  2. Add everything to the slow cooker—beef, beans, tomatoes, broth, beer, and spices.
  3. Cook on low for 6–8 hours or high for 3–4 hours.
  4. Serve hot with cheese, avocado, and tortilla chips on top.
