Ingredients
  

For the Cake:
  • 2 cups all-purpose flour
  • 2 teaspoons baking soda
  • 2 teaspoons ground cinnamon
  • ½ teaspoon ground nutmeg
  • ½ teaspoon salt
  • 1 ½ cups granulated sugar
  • ½ cup brown sugar packed
  • 1 cup vegetable oil
  • 4 large eggs
  • 2 teaspoons vanilla extract
  • 3 cups grated carrots
  • 1 cup crushed pineapple drained
  • 1 cup chopped walnuts or pecans optional
  • ½ cup raisins or shredded coconut optional
For the Cream Cheese Frosting:
  • 8 ounces cream cheese softened
  • ½ cup unsalted butter softened
  • 4 cups powdered sugar
  • 2 teaspoons vanilla extract
  • Pinch of salt

Method
 

  1. Mix flour, spices, and leavening.
  2. Beat sugars, oil, eggs, and vanilla.
  3. Combine wet and dry, then fold in carrots, pineapple, and nuts.
  4. Bake at 350°F for 35–40 minutes.
  5. Cool and frost with cream cheese frosting.
