Ingredients
  

For the Filling:
  • 1 can chickpeas 15 oz, drained and rinsed
  • 1 large ripe avocado
  • 2 tablespoons fresh lemon juice
  • 2 tablespoons red onion finely chopped
  • 2 tablespoons fresh parsley or cilantro chopped
  • 1 garlic clove minced
  • Salt and black pepper to taste
Optional Add-ins:
  • 1 teaspoon Dijon mustard
  • ½ teaspoon smoked paprika or chili flakes
  • 1 tablespoon olive oil for extra richness
For Serving:
  • 8 slices whole-grain or sourdough bread toasted if desired
  • Lettuce leaves spinach, or sprouts
  • Sliced cucumbers or tomatoes

Method
 

  1. Mash chickpeas and avocado in a bowl until creamy but slightly chunky.
  2. Stir in lemon juice, onion, garlic, herbs, salt, and pepper.
  3. Spread mixture onto bread and add toppings.
  4. Close sandwiches, slice, and serve fresh.
