Ingredients
  

For the Beet Burger Patties
  • 2 medium beets peeled and grated
  • 1 cup canned black beans or chickpeas drained and rinsed
  • ½ cup breadcrumbs
  • ¼ cup finely chopped onion
  • 2 cloves garlic minced
  • 1 teaspoon smoked paprika
  • ½ teaspoon cumin
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 tablespoon olive oil
  • 1 egg or flax egg for vegan option

  • Red onion rings
  • Mayonnaise yogurt sauce, or favorite burger spread

Method
 

  1. Prepare the Beets: Begin by peeling the beets and grating them using a box grater. The grated beets should look fine and slightly moist. If they release a lot of liquid, gently press them with a paper towel so the burger mixture does not become too wet.
  2. Mash the Beans: Place the drained beans in a mixing bowl and mash them lightly with a fork. Aim for a texture that still has small pieces rather than a completely smooth paste. This step helps create structure inside the burger patties.
  3. Combine the Main Ingredients: Add the grated beets to the mashed beans along with the chopped onion and minced garlic. Stir the mixture slowly until the vegetables distribute evenly and create a colorful, chunky base.
  4. Season the Mixture: Sprinkle in the smoked paprika, cumin, salt, and black pepper. Mix well so the spices spread through the entire mixture and give the burgers their warm, savory flavor.
  5. Add the Binder: Pour in the breadcrumbs and add the egg or flax egg. Stir everything together until the mixture forms a thick dough that can hold its shape when pressed between your hands.
  6. Shape the Patties: Divide the mixture into equal portions and gently shape them into round burger patties. Try to keep them about three quarters of an inch thick so they cook evenly and remain sturdy.
  7. Cook the Beet Burgers: Heat olive oil in a skillet over medium heat. Place the patties in the pan and cook for about 4 to 5 minutes on each side. The outside should turn golden while the inside stays tender and flavorful.
  8. Assemble the Burgers: Place the warm patties inside toasted buns and add your favorite toppings such as lettuce, tomato, avocado, and sauce. The bright color of the burger makes the whole meal look vibrant and inviting.
