My easy Mexican-style recipes are always popular. It seems you guys can’t get enough of my Chicken Fajitas and my Chilli Con Carne! So, on a night when the kitchen needed to feel lively, I decided it was high-time to create a Chicken Burrito version.

These super simple Chicken Burritos are packed full of delicious fillings: seasoned chicken, fluffy rice, beans – and of course melted cheese. (It wouldn’t be a burrito without the cheese!)

I’ve wrapped it all in warm tortillas to keep those bold spices and creamy, hearty layers inside.

The result is a delicious relaxed dinner that feels AND tastes super-special!

Ingredients

For the Chicken Filling:

  • 1 pound chicken breasts skinless and boneless, cut into small pieces
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • 3 cloves garlic minced
  • 2 tablespoons olive oil
  • ¼ cup water

For the Burritos:

  • 8 large flour tortillas
  • 1 small onion chopped
  • 1 medium red bell pepper chopped
  • 1½ cups refried beans
  • 2 cups cheddar cheese shredded
  • 2 cups Mexican rice
  • 1 cup corn
  • Salsa
  • Sour cream
  • Nacho cheese sauce

Step by Step Instructions

1. Season the Chicken

Chicken pieces are placed into a bowl and coated with salt, pepper, chili powder, cumin, smoked paprika, and oregano. Everything is mixed gently so seasoning reaches all sides.

2. Cook the Chicken

Olive oil is heated in a large pan over medium heat. Chicken gets added and stirred slowly. Garlic joins the pan and cooks until fragrant. Water is poured in to keep moisture steady.

3. Add Vegetables

Chopped onion and red bell pepper are stirred into the pan. Softening happens gradually while flavors blend together. Cooking continues until chicken stays tender.

4. Warm the Fillings

Refried beans, Mexican rice, and corn are warmed separately so everything stays hot during assembly. This step makes wrapping easier later.

5. Heat the Tortillas

Flour tortillas are warmed in a dry pan until soft and flexible. This helps prevent tearing while rolling.

6. Assemble the Burritos

Chicken filling gets spooned down the center of each tortilla. Beans, rice, corn, cheese, salsa, sour cream, and nacho cheese sauce are layered carefully.

7. Wrap and Serve

Sides of the tortilla are folded inward, then rolled tightly. Burritos are served warm while cheese stays melty.

Tips and Variations

  • Extra spice can be added with more chili powder.
  • Bell pepper colors can be mixed for visual pop.
  • Grilling the wrapped burritos creates a crisp outer layer.
  • Rice can be swapped with extra beans for lighter filling.

Serving Suggestions

Chicken Burritos pair nicely with tortilla chips and extra salsa on the side. A simple salad brings freshness to the plate. For gatherings, ingredients can be laid out buffet style so everyone builds their own wrap. Cold drinks balance the spices and make the meal feel complete.
